2005 Lailey Vineyard Chardonnay Canadian Oak VQA Niagara River
The
release of 2005 Chardonnay and Pinot Noir Canadian Oak marks the fifth
vintage of Canadian oak wines at Lailey Vineyard. We continue to appreciate
the nuances of our homegrown oak and to delight in its particular contribution
to each vintage. Visit the Canadian

technical
note
After
cold stabilization, the skin and juice of the crushed grapes were put
into Canadian oak barrels and yeast was added. After alcoholic and malolactic
fermentation was complete, the wine remained on its lees (the spent yeast
from fermentation) throughout the entire nine and a half month aging period
and underwent weekly batonage (stirring of the spent yeast cells into
the wine to impart warm, nourishing flavours) before fining and bottling.
winemaker’s tasting note
The wine is light straw in colour with pineapple, lemon grass and coconut
aromas. The palate is loaded with tropical fruit
flavours, toasted coconut and a bright, lemony acidity that keeps the
finish long and lively.
